“If the other citrus fruits originate in China, Bergamot, on the other hand, is Italian. It is a real shame not to know the author of its creation, the one who crossed a lemon tree with one of bitter orange: he could have received the same tribute as his colleague Clément, who invented clementine. Italian traders went so far as to sell Bergamot to the Chinese to flavor their second-rate tea, which they then sold to the British. I am often asked if I have any olfactory preferences. I have always said no, wanting to hide the manipulations I exercise on smells, since the work of the perfumer is very similar to that of an illusionist.
